Loison Panettone breaded sardines

In this recipe by Paulo Šverko, chef and owner of  Fančita Restaurant in Orsera (Vrsar) in Istria - Croatia, the Adriatic sea marries the flavour of  Loison Panettone.

Ingredients (Yields 4)

8 fresh sardines

1 egg, beaten

100 gr flour

Loison Mandarin Panettone Powder

2 medium-sized potatoes

100 g fresh radicchio and spinach leaves

1 red onion

Extra-virgin olive oil

Apple cider vinegar

Freshly ground salt and black pepper

Oil for frying




Clean the sardines by removing the head, the innards and the bones.

Boil the potatoes and, when done, peel and cut into small pieces.

Make a salad with the radicchio, spinach, cubed potatoes and red onion. Season with olive oil, salt, pepper and apple cider vinegar.

Prepare the ingredients for the breading steps.

Dredge the sardines first in the flour, then in the egg and finally in the Mandarin Panettone Powder.

Bring the frying oil to a temperature of about 180° C and fry the breaded sardines.

Serve hot, dressed with a few drops of lemon juice and a pinch of salt, along with the prepared salad.
