Pumpkin is excellent for many savory dishes such as soup, risotto, gnocchi, but have you ever thought about preparing it as a dessert?

Chef David Perissinotto explains how to cook pumpkin and transform it into this unusual dessert, which enhances the aromas and flavors of Panettone by the slice Mandarin , but you can also replace it with Panettone by the slice Classic.

  • 1 Panettone by the slice Mandarin
  • 1 pumpkin (you will then need only 100 grams of cooked pumpkin)
  • 200 ml whole milk
  • 50 g sugar
  • Mustard Mantovana
  • Powdered sugar to taste
  • Mascarpone cheese
  • Cinnamon
  • Powdered sugar
 
Directions
Cut the pumpkin, remove the seeds and cook it in the oven at 180 degrees for 45 minutes.
Once the pumpkin is cooked, put the pulp in a saucepan, add sugar, milk and bring to a boil, add cinnamon (to taste).
Blend the mixture with an immersion blender and leave to cool.
Cut the slice of Panettone into cubes, toast them in a non-stick pan on all sides. They must be golden on the outside.
Take the mustard and cut the fruit into slices,
Plating
Once the pumpkin cream is cold, transfer it to a pastry bag and decorate the dish.
Then add the slices of fruit, the cubes of panettone, a few quenelles of mascarpone and complete with a sprinkling of icing sugar.
