This original version of the classic Italian dessert uses panettone instead of ladyfingers, creating an explosion of flavors in every bite.
If you don’t have panettone, you can use a slice of colomba or pre-sliced cake!

- Slices of panettone base
- 500g mascarpone
- 3 tablespoons powdered sugar
- Coffee to taste
- Cocoa powder
Procedimento
In a bowl, mix the mascarpone with the egg yolks and powdered sugar. Separately, beat the egg whites until stiff and fold them into the mascarpone cream.

Add the crumbled panettone to the mixture and let it rest in the fridge for half an hour. In the meantime, roll out the slice of panettone with a rolling pin and cut out disks with a pastry cutter.

Bake the disks in a preheated oven at 150°C (300°F) for 7 minutes. Once baked, sprinkle the panettone disks with granulated sugar and caramelize.

Plating

Place sifted cocoa powder on a serving plate and position the panettone disks on one side. Using a piping bag, form dollops of mascarpone cream on the plate. Garnish the plate with coffee beans and serve with a small cup of coffee to soak the disks. If desired, decorate the plate with ground coffee and serve.
